Canada's budding craft cider industry has taken off

Make cider the apple of your eye. Apples are crushed and pressed. Many Canadian cider producers grow their own apples, and while some stick with more traditional bittersharp and bittersweet varieties — which lead to more dry flavour — other producers, such as Slabtown in Uxbridge, grow up to 400 varieties of apples to create their own blends and unique flavours. What kind of apples are used? Not the Red Delicious or other types you would normally eat or cook with.
