Much of the eatery’s seven significant infractions were equipment-related, including failing to provide a thermometer in its refrigeration equipment, utensils not being sanitized in the proper chlorine solution of less than 100 p.p.m. (parts per million), and mechanical equipment not maintained for rinse water.

Also, food equipment was not of sound and tight construction, so the food equipment was “not of readily cleanable form,” as were the utensils.

Inspectors also noted a dirty towel was used for cleaning surfaces that come into contact with food.

The fourth violation was failing to ensure equipment surfaces were sanitized as necessary.
