The crucial violations were failing to ensure a food handler washed their hands as necessary to prevent the contamination of food, failing to protect food from contamination or adulteration, and storing potentially hazardous foods at internal temperature between 4C and 60C.
The restaurant’s significant infractions were using food equipment not of sound and tight construction as well as using equipment not free from cracks “in contact with food.”
A dirty towel was used for cleaning surfaces that come into contact with food, and the utensils were not sanitized in the proper chlorine solution.
As for the minor infractions, Phat Kaphrao failed to protect against entry of pests and equipment surfaces were not sanitized as necessary, inspectors said.
The food-handling room and its floors were not maintained in sanitary condition, they added.
