Toronto health inspectors served up 11 infractions to a major Canadian sushi chain eatery.
The chain has 39 restaurants in the GTA and Calgary – 36 locations in the GTA – six of which are express, and it’s one of those express locations that received a conditional pass notice on Friday.
Its three crucial violations were failing to protect food from contamination or adulteration and ensuring a food handler on the premises washed their hands as necessary to prevent the contamination of food.
Health inspectors also found that potentially hazardous foods were not stored at an internal temperature between 4C and 60C.
Health inspectors issued three significant infractions for using utensils that were “not of readily cleanable form,” nor were the utensils sanitized in the proper chlorine solution.
Kibo also failed to provide a thermometer in its refrigeration equipment.
Three of the five minor issues were about the maintenance of the food-handling room, specifically not keeping the floors clean and keeping the space itself in sanitary condition, as well as keeping the room free from equipment not regularly used.
Kibo also failed to protect against the entry of pests and ensuring equipment surfaces were sanitized as necessary.
